Simple, gut-friendly lunch, but also tasty too. My beetroot and butterbean salad is packed with nutrients that will boost your mood and energy levels.
INGREDIENTS
- 1 Large Beetroot, cooked
- ½ Small Red Onion, sliced & left in red wine vinegar for 10 minutes
- Large Handful Salad Leaves
- ½ Can Butterbeans
- Small handful of Walnuts
- 20g Feta Cheese
- Drizzle with Extra Virgin Olive Oil
DIRECTIONS
- Slice onion & leave in red wine vinegar for 10 minutes whilst getting the salad ready.
- Chop the beetroot into small pieces
- Add the salad leaves onto a plate
- Drain a can of butterbeans and add to the leaves
- Add the rest of the ingredients to the salad and drizzle with extra virgin olive oil
