Super easy one-pot meal, made with a handful of ingredients, but also incredibly nutrient-dense and healthy.
INGREDIENTS
- 1 tbsp Coconut Oil
- 1 Leek, sliced
- 4 Garlic Cloves, peeled and chopped
- 2 Broccoli Heads, chopped
- 1 ltr Vegetable Stock
- 1/2 Can Coconut Milk
DIRECTIONS
- Heat coconut oil in a large saucepan over medium heat. Add leek and cook until soft.
- Add chopped broccoli, stock and coconut milk, bring to a gentle boil and then turn down to a simmer until broccoli is just tender. Add chopped garlic towards the end of simmering.
- Once the broccoli is tender, remove the soup from the heat and leave to cool slightly.
- Season with sea salt and pepper to taste.
- Pour into blender and blitz until smooth.
NOTES
Try topping with roasted chickpeas to give a lovely nutty flavour to the soup.
