Vegan-Friendly Broccoli Soup

Super easy one-pot meal, made with a handful of ingredients, but also incredibly nutrient-dense and healthy.

INGREDIENTS

  • 1 tbsp Coconut Oil
  • 1 Leek, sliced
  • 4 Garlic Cloves, peeled and chopped
  • 2 Broccoli Heads, chopped
  • 1 ltr Vegetable Stock
  • 1/2 Can Coconut Milk

DIRECTIONS

  1. Heat coconut oil in a large saucepan over medium heat. Add leek and cook until soft.
  2. Add chopped broccoli, stock and coconut milk, bring to a gentle boil and then turn down to a simmer until broccoli is just tender. Add chopped garlic towards the end of simmering.
  3. Once the broccoli is tender, remove the soup from the heat and leave to cool slightly.
  4. Season with sea salt and pepper to taste.
  5. Pour into blender and blitz until smooth.

NOTES

Try topping with roasted chickpeas to give a lovely nutty flavour to the soup.
