Gut-Friendly Beetroot and Butterbean Salad with Feta

Simple, gut-friendly lunch, but also tasty too. My beetroot and butterbean salad is packed with nutrients that will boost your mood and energy levels.

Beetroot and Butterbean salad with feta

INGREDIENTS

  • 1 Large Beetroot, cooked
  • ½ Small Red Onion, sliced & left in red wine vinegar for 10 minutes
  • Large Handful Salad Leaves
  • ½ Can Butterbeans
  • Small handful of Walnuts
  • 20g Feta Cheese
  • Drizzle with Extra Virgin Olive Oil
DIRECTIONS
  1. Slice onion & leave in red wine vinegar for 10 minutes whilst getting the salad ready.
  2. Chop the beetroot into small pieces
  3. Add the salad leaves onto a plate
  4. Drain a can of butterbeans and add to the leaves
  5. Add the rest of the ingredients to the salad and drizzle with extra virgin olive oil
