Turmeric poached eggs with spinach and toast

INGREDIENTS

  • 2 tbsp Turmeric Powder
  • 1 large Egg (organic if possible)
  • 1 tbsp White Vinegar
  • Handful of Wilted Spinach
  • Sliced of Wholemeal Sourdough

DIRECTIONS

  • Fill a medium saucepan with water and bring it to a boil
  • Crack an egg into a small bowl and line a clean plate with paper towels
  • When the water is boiling, add 2 tablespoons white vinegar and 2 teaspoons ground turmeric.
  • Reduce the heat to keep the water gently simmering, then pour in the egg
  • Poach the egg for 3-4 minutes, then pull it out with a slotted spoon and dry it off on the paper towels
  • Serve with wilted spinach or toast with avocado
